When to harvest your microgreens

Microgreens are the seedlings of edible herbs and vegetables.

 

These trendy little greens are the quickest and easiest food crop you can grow, with no space or gardening skills required!

 

Microgreens are usually ready to harvest and eat in just 10 – 14 days, depending on the species. This is usually when the first 2 leaves have grown and are a rich green colour.

 

To harvest your crop, snip them with a sharp pair of scissors, you might damage the delicate greens if you try to pull them out of the soil and you won’t want to eat the roots. Just cut straight across the plants just above the soil.

 

If you cut just below the lowest leaf, some microgreens like pea shoots may regrow.

 

They should be washed in water before eating, then either pat dry with a paper towel or use a salad spinner. Add to just about any meal for extra nutrients, colour and crunch.
