Tasty ways to use your microgreens

One of the questions that we get asked the most is “what can I do with the microgreens I grow?”


Microgreens are so versatile, so there is no short answer to that question. There are countless possibilities!


Microgreens, or ‘vegetable confetti’ as they are sometimes called, are the seedlings of leafy herbs and plants that are harvested and eaten when the plant is still immature and small.


They are bursting with flavour and goodness so are a great addition to your favourite dishes as a delicious and colourful garnish. The tiny leaves are packed with vitamins, antioxidants and minerals such as iron, folic acid and potassium. There’s no need to cook them – in fact doing so reduces their nutrient content, so from a nutritional point of view, it’s best to enjoy them raw.


Ideally harvest your microgreens just before you wish to use them so they are lovely and fresh. Use scissors to cut the stems just above the soil level and rinse gently to remove any soil particles. If you don’t want to eat them right away, cut microgreens will stay fresh for a few days if stored in the fridge.


Microgreens generally taste like a more intense version of their full-sized vegetable counterparts. Some people eat them as a snack on their own. Alternatively, you can use them to top soups, salads, sandwiches, pasta and rice dishes, casseroles, curries, pizzas, omelettes or burgers.
